Artisanal Chocolate Making Class
 

Chocolate Class One: Primary Skills

Come experience six hours of hands-on, intensive gourmet chocolate class and demonstration. Each class is led by a Wiseman House Chocolates chocolatier Kevin Wenzel and will include:

A brief history of chocolate

An introduction to making fine chocolate truffles and confections

How to temper chocolate

How to make ganache

Rolling and dipping chocolate truffles

Classes are from 9 A.M. to 4 P.M. Classes are broken up into two sections and will include a light meal. At the end of the class you will be able to take home your own original gourmet chocolate confections. Classes are only available on the scheduled dates, or made by appointment a minimum of 4 people per class with a maximum of 9.

Classes are held at Wiseman Chocolate Studio 106 S Pecan St in downtown Hico, Texas.

Cost

$250/per person for a 7-hour class 9am-4pm

A $50 [non-refundable] deposit is required to register for an individual chocolate class and a $100 deposit is required to register for both classes one and two together**

Please bring a cooler to take your fresh made chocolates home. Wear closed toe shoes and clothes you don’t mind a chocolate stain. Aprons and light lunch provided. Call us at 254-796-2499 to schedule a class.


 

Chocolate Class Two: Secondary Skills

Join Chocolatier Chef Kevin at Wiseman House Chocolate Studio in our second core class that goes beyond the basics into an intensive class on self expression in chocolate. Tempering chocolate is still at the heart of our program, however creating personal creative flavors and techniques to enhance your own style of confectionery is the theme of this hands on class. Infusing flavor into chocolate and chocolate ganache focusing on the taste as well as eye appeal. There will be time for practicing and discovering chocolate decorating that can be applied to chocolates, confections and desserts.

The class will include:

advanced flavor preparations

practice in tempering chocolate

techniques in chocolate decorations

Different styles to enrobe chocolates

Cost

Special Class: Extraordinary Caramels

Caramel, warming comforting creamy sweetness; what’s not to love? Making it yourself requires patience and doing it well requires skill. Confectioner extraordinaire Chef Steven Smith has the skill we love and will be in Hico to share it.. Chef Kevin will be in attendance to guide the class.

Class time 9am-4pm with light lunch provided Cost: $200 A $50 [non-refundable] deposit is required to register.

 Chocolate Class Three: Advancing Skills

Chocolate Class Three is an advanced class designed for home chocolatiers wanting to elevate their chocolate/confectionery skills to a higher level with emphasis on product quality and size consistency. This class will focus on uniformity in sizing, how to create different truffle shapes, the enrobing of those shapes, methods to divide ganache to achieve size evenness, refinement of dipping skills and possibly a few surprises along the way.

Prerequisite for this class is prior attendance in Chocolate Class One and Class Two recommending attendance of Class Three after a year of experience .

To maximize personal attention and the hands-on chocolate experience this class is structured to accommodate three to four students only. The class is designed to cover two, seven-hour days with a break for lunch which is provided.

Special Class: Bean to Bar Basics

This class will show you the basics of bean to bar to make at home or part of your new side hustle. Roast, winnow, grind all the way to smooth delight. We will also talk about inclusions and natural additives that play well together. This class is hands on and not as scary as it seems, really. We will demystify the magic of chocolate so your comfortable to grind your own.
